I love finding new ways to use familiar ingredients when I’m baking. This week I’m all about making my own nut flour – almond flour, specifically! It adds a deliciously nutty flavor to cookies and a crumbly texture to cakes and muffins. And the best part? It’s so easy to make at home! Here’s how:

Step 1 – Place 1 cup of almonds in a food processor

Step 2 – Pulse for 2 minutes, stopping every 15 seconds to scrape down the sides of the bowl

Step 3 – After 2 minutes, check the consistency of the almonds. They should be very finely ground, but not oily. Watch out – if you run the food processor for too long, you’ll end up with almond butter!

Step 4 – Use your almond flour for baking! Keep in mind that almond flour needs to be mixed with other flours, like rice flour, if you are going to make your recipe gluten-free. If you are using almond flour to add texture and flavor, simply reduce the amount of all-purpose flour by ½ cup and add 1 cup of almond flour to the recipe.

These aren’t gluten-free, but the almond flour adds amazing flavor and warmth to the cookies!
