Almond Flour Shortbread

Ingredients

  • 1 cup unsalted butter, room temperature (2 sticks)
  • 3/4 cup confectioners sugar
  • 1 cup almond flour
  • 1 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • 40 whole Diamond of California Almonds

The Steps

  1. In the bowl of an electric mixer, beat the butter until it’s light and fluffy. About 3 minutes.
  2. Add the sugar and mix to combine.
  3. Scrape down the sides of the bowl, then add the almond flour, all-purpose flour and salt. Mix until just combined.
  4. Refrigerate the dough for 30 minutes.
  5. Pre-heat the oven to 325 degrees. Transfer the dough to a lightly floured surface and roll out in to a ½ inch thick sheet.
  6. Use a knife to cut the dough into 1 inch by 2 inch rectangles. Press one almond into the center of each cut-out.
  7. Transfer the cookies to a parchment lined baking sheet, spacing them 2-inches apart.
  8. Bake for 8 to 10 minutes or until edges are golden brown.
  9. Transfer to a wire rack to cool before serving.
