Emerald Original Glazed Walnut Shrimp

  • Marinade
  • 1 tablespoon Chinese rice wine or dry sherry
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • white pepper to taste
  • 1-½ pound medium raw shrimp, shelled and deveined
  • Sauce
  • cup mayonnaise
  • 2 teaspoons sugar
  • 2 teaspoons oyster-flavored sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon grated lemon zest
  • 1 teaspoon chili garlic sauce
  • 4 cups chopped iceberg lettuce or Napa cabbage
  • 2 tablespoons cooking oil
  • 2-3 tablespoons chicken broth
  • 1 cup Emerald Original Glazed Walnuts


Combine marinade ingredients in a bowl. Add shrimp and stir to coat. Let stand for 20 minutes

Combine sauce ingredients in a glass or stainless steel bowl

Place chopped lettuce or Napa cabbage on a serving plate

Place a wok over high heat until hot. Add oil, swirling to coat sides. Add shrimp and stir-fry until they turn pink, about 2-3 minutes. Add broth and cook for 1 minute. Add sauce and toss to mix well.

Arrange shrimp on the plate over the chopped greens; sprinkle with Diamond Original Glazed Walnuts.
