Tomato Salad with Goat Cheese and Pine Nuts

  • 4 large heirloom tomatoes, sliced
  • 1 log goat cheese, crumbled
  • 1 tablespoons olive oil (may need 2)
  • 1/4 cup Diamond of California Pine Nuts, toasted
  • 2 tablespoons fresh chopped herbs like basil, chives, oregano, etc
  • Salt and pepper, to taste

The Steps

  1. Arrange tomato slices on a large plate or platter. Top with crumbled goat cheese, olive oil, pine nuts and fresh herbs. Season with salt and pepper. Serve immediately.

Note: To toast pine nuts, place in a small ungreased skillet set over medium low heat. Toast for about 5 minutes, stirring occasionally so they don’t burn. Let cool.
