Romaine Salad with Glazed Pecans & Mandarin Oranges
Makes 4 to 6 servings.
1 head of romaine lettuce, washed and cut into bite size pieces
1 (10oz) can of Mandarin oranges, drained
1 small red onion, peeled and sliced very thin (soak sliced onion for five minutes in ice water before using)
½ cup Diamond of California® Nut Toppings™ Glazed Pecans
½ cup red wine vinaigrette (can substitute champagne vinaigrette or poppy seed dressing)
Add romaine to salad bowl, top with oranges, onions, and Glazed Pecans. Drizzle with dressing, toss and serve immediately.
