Low Country Fried Flounder

A Runner-Up in the 2009 Diamond Recipe Challenge.


  • 1 pound of FRESH flounder (or similar white fish)
  • 1 quart of buttermilk
  • ½ cup of organic pancake mix
  • ½ cup of plain yellow corn meal
  • ¼ cup of Diamond pecans, crushed
  • ½ tsp. salt
  • ¼ tsp. each of sugar, paprika, cumin, black pepper, Old Bay
  • 1 egg
  • 1 splash of Guiness or your favorite dark beer


Clean the flounder and cut into large pieces. Place the flounder in a deep dish and cover with buttermilk reserving ½ cup of the buttermilk. Cover dish with plastic wrap and refrigerate for ½ hour. In a bowl mix the egg, ½ cup of buttermilk and the beer. In a separate bowl mix the pancake mix, cormeal, pecans, salt, sugar, paprika, cumin, Old Bay and black pepper. Soak the fish in the egg/buttermilk and then coat with the dry mixture. Leave the coated fish sitting on a dish or cutting board until the coating is damp. This will make it stick better when frying. Deep fry a few peices at a time for 4-5 minutes at 375 degrees.
