Spiced Mixed Nuts
This recipe was prepared for Diamond Foods by Chef Almir da Fonseca of the Culinary Institute of America.
1 cup walnuts
1 cup almonds
1 cup pecan halves
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp yellow Mustard seeds
⅓ tsp Cayenne pepper
1 tsp lemon zest
Sea salt to taste
Cracked black pepper to taste
Fried sage parsley leaves for garnish (quickly deep fried until crispy)
Toast the seeds in a dried sauté pan, and crush in a spice grinder.
In a mixing bowl, add mixed crushed nuts, cayenne, salt, pepper and lemon zest,
mix well, and let the mixture rest for 20 minutes.
Deep fry the three nuts, in a 350 F fryer, until golden brown and crispy.
Shake the excess oil, and toss the fried nuts in the spice mixture, rest for 10
minutes, adjust seasoning if needed fold gently the fired sage or parsley leaves for
garnish and serve.
