Healthy Sweet Potato Muffins

Ingredients

1 cup whole wheat flour

1 cup all-purpose flour

½ cup turbinado sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon baking soda
-
½ teaspoon salt

½ cup chopped Diamond walnuts

½ cup raisins
-
1 cup low-fat milk
-
1 tablespoon light olive oil

¼ cup organic maple syrup
-
¾ cup smashed cooked sweet potato

Directions
Preheat oven to 350 degrees. Spray a 12-cup muffin pan with cooking oil spray.
In a medium sized bowl, stir together the whole wheat and all-purpose flour, sugar, baking powder, cinnamon, nutmeg, baking soda, salt, walnuts and raisins.
In a separate large bowl, whisk together the milk, oil, maple syrup, and mashed sweet potato. Add the dry ingredients to the wet ingredients and stir gently until mixed. Spoon the batter into the muffin pan and bake until golden and a toothpick inserted comes out clean, 20-25 minutes. Cool on wire rack.
