California Ceviche

A runner up in the 2009 Diamond Nuts Recipe Challenge.


  • 1 pound fresh halibut filets (or other fresh white fish)
  • ½ cup fresh lemon juice
  • ¼ cup fresh grapefruit juice
  • 1 clove garlic, finely minced
  • ½ cup raisins, chopped
  • ½ cup Diamond chopped walnuts, toasted
  • 1 tablespoon fresh tarragon leaves, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • Lemon slices, for garnish
  • Tarragon sprigs, for garnish


Cut the fish into ½-inch dice and place in a glass bowl. Add the lemon juice, grapefruit juice and garlic; lightly toss to coat. Cover and place in the refrigerator for 3 hours.

In a medium bowl, combine the raisins, walnuts, tarragon, olive oil, salt and pepper. Using a slotted spoon lift the fish from the marinade and add to the raisin mixture; toss well. Spoon into chilled martini glasses or into small bowls and garnish with lemon slices and tarragon sprigs.
