California Ceviche

Ingredients

1 pound fresh halibut filets (or other fresh white fish)

½ cup fresh lemon juice

¼ cup fresh grapefruit juice

1 clove garlic, finely minced

½ cup raisins, chopped

½ cup Diamond chopped walnuts, toasted

1 tablespoon fresh tarragon leaves, finely chopped

2 tablespoons extra-virgin olive oil

½ teaspoon kosher salt

⅛ teaspoon freshly ground black pepper
- Lemon slices, for garnish

Tarragon sprigs, for garnish
Directions
Cut the fish into ½-inch dice and place in a glass bowl. Add the lemon juice, grapefruit juice and garlic; lightly toss to coat. Cover and place in the refrigerator for 3 hours.
In a medium bowl, combine the raisins, walnuts, tarragon, olive oil, salt and pepper. Using a slotted spoon lift the fish from the marinade and add to the raisin mixture; toss well. Spoon into chilled martini glasses or into small bowls and garnish with lemon slices and tarragon sprigs.
