Caramelized Onion, Walnut and Gorgonzola Pizza

Makes four 6 inch or two 12-inch pizzas



  • ¼ cup unsalted butter
  • 10 cups thinly sliced red onions
  • salt and pepper, to taste
  • basic Pizza Dough rounds (see recipe)
  • 1 cup crumbled gorgonzola cheese
  • 1 cup toasted Diamond chopped walnuts
  • Olive oil


Melt butter in large, heavy-bottomed skillet.
Add onions and cook slowly, stirring occasionally, about 30 minutes until they are soft and golden.
Season with salt and pepper.
Spread onion mixture evenly on prepared, uncooked pizza dough rounds.
Distribute little chunks of Gorgonzola over the onions.
Sprinkle with walnuts.
Bake in a very hot (450-degree) oven about 12 minutes, or until crust is puffed and golden and walnuts are toasty.
Brush edge of crust lightly with olive oil.
