Walnut-Crisped Zuccini

Ingredients

  • 1 pound zucchini, cut into ¼ -inch slices
  • 1 medium-size green pepper, sliced into rings
  • cup red onion rings
  • 3 tablespoons butter, divided
  • 1 teaspoon salt
  • ¼ teaspoon marjoram
  • teaspoon pepper
  • ¼ teaspoon grated lemon peel
  • 2 teaspoons lemon juice
  • 2 tablespoons water
  • ½ cup Shelled Diamond Walnuts
  • Generous dash seasoned salt

Directions


Sauté zucchini, pepper rings and onion rings in 2 tablespoons of the butter about 5 minutes, over moderate heat, stirring gently.
Sprinkle with seasonings, lemon peel and juice, and water.
Cover tightly and cook 5 to 8 minutes longer, just until tender crisp.
Meanwhile, sauté walnuts in remaining tablespoon butter for 5 minutes over low heat.
Sprinkle with seasoned salt.
When zucchini is tender, add walnuts and mix lightly.
Serve at once.

Makes 4 to 6 servings.
