Eggs a la Queen

  • 3 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 1 teaspoons salt
  • 2 cups milk
  • 1 teaspoon prepared mustard
  • 1 cup Grated cheddar cheese
  • 1 can (3-ounce) mushrooms, drained
  • 1 tablespoon chopped parsley
  • 1 tablespoon diced pimiento
  • ½ cup coarsely chopped toasted Diamond Walnuts
  • 6 hard-cooked eggs
  • Toast


Melt butter and blend in flour and salt.
Add milk; cook and stir until mixture boils and is thickened.
Add mustard and cheese, and stir over low heat until cheese is melted.
Blend in mushrooms, parsley, pimiento and walnuts.
Slice eggs and add to sauce.
Serve hot on crisp toast.

Makes 4 servings.
