Peas with Bacon and Walnuts
4 slices Bacon, cut into 1-inch pieces
1 cup Shelled Diamond Walnuts
1 cup chopped onion
20-oz. pkg. Frozen peas
⅛ teaspoon thyme
Salt and pepper
Fry bacon until very crisp; remove from pan.
Drain off all but 2 tablespoon bacon fat.
Sauté walnuts in fat for 1 minute; remove from pan.
Sauté onion until transparent.
Add peas, thyme, salt and pepper to taste.
Cover; cook about 10 minutes or just until peas are tender, stirring occasionally.
Add bacon and walnuts; toss lightly and serve.
