Chinese Chicken Rolls

Makes 2 cups.



  • ½ lb. Boneless skinless chicken breasts, finely chopped.
  • 1 tablespoon soy sauce
  • 1 clove Garlic, minced
  • ¾ teaspoon chili powder
  • ¾ teaspoon ginger
  • 1 tablespoon oil
  • ½ cup chopped celery
  • ¾ cup chopped Diamond Walnuts
  • ¼ cup sliced green onions
  • 2 tablespoons Ketchup
  • 1 tablespoon cider vinegar
  • Iceberg lettuce leaves or warm flour tortillas


Combine chicken, soy sauce, garlic, chili powder and ginger; let stand 15 minutes.
Heat oil in skillet; cook chicken mixture until chicken is no longer pink.
Add celery; cook 1 minute.
Stir in walnuts, onions, ketchup and vinegar; heat through.
Serve rolled inside lettuce leaves or tortillas.
