Cucumber Salad with Emerald Original Glazed Walnuts
- ¼ cup lemon juice or lime juice
1-½ tablespoon honey
1 tablespoon sesame oil
1 tablespoon grated ginger
2 teaspoons finely minced garlic
1-½ teaspoons chili garlic sauce or hot pepper sauce
- 1 English cucumber
1 red onion, thinly sliced
4 ounces small cooked shrimp
½ cup Emerald Original Glazed Walnuts
Combine dressing ingredients in a small bowl; whisk until blended.
Peel cucumber, leaving a few strips of green for color. Cut cucumber in half lengthwise, then thinly slice; place in a large bowl with onion slices. Cover and refrigerate until ready to serve.
Add shrimp to cucumber mixture. Pour dressing over salad and toss. Sprinkle with Diamond Original Glazed Walnuts.
