Ingredients

  • 4 cups mixed greens
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tsp honey
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • 4 beets, roasted and sliced
  • 1/4 cup crumbled goat cheese
  • 1/2 cup Diamond of California¬ģ Chopped Pecans

The Steps

  1. Place the greens in a large bowl. Set aside.
  2. To make the dressing, whisk together the olive oil, white balsamic vinegar, honey, Dijon, salt and pepper. Pour over the greens and toss to coat.
  3. Divide the greens between four plates. Top each with sliced beets, a sprinkle of goat cheese and toasted pecans.
