Banana Split Pudding Jars

Ingredients

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon fine salt
  • 2 1/4 cups whole milk
  • 3 large egg yolks, lightly beaten
  • 3 tablespoons unsalted butter, cut into small pieces
  • 2 teaspoons vanilla extract
  • 3 bananas, sliced into ½ inch pieces
  • 1 1/2 cups Diamond of California® Pecan Chips
  • Whipped Cream
  • Sprinkles
  • Chocolate shavings or chocolate sauce
  • 8 Fresh cherries

The Steps

  1. Place a strainer over a large bowl, set aside.
  2. In a large sauce pan combine the sugar, cornstarch, salt, milk and egg yolks. Cook over medium-high heat, stirring constantly with a wooden spoon until mixture thickens and coats the spoon.
  3. Remove from heat and stir in the butter and vanilla extract.
  4. Pour the mixture through the strainer into the large bowl. Cover with plastic wap, pressing it all the way down until it touches the pudding and refrigerate for 2 hours.
  5. When the pudding is completely cool, start assembling the jars. Put about 1 tbsp of pecan chips in the bottom of each 1-cup jar, then top with a layer of banana slices and about ¼ cup of pudding.
  6. Add chocolate sauce or shavings, more pecans, more bananas and more pudding to each jar, layering until the jars are full.
  7. Top with whipped cream, a sprinkle of remaining nuts, sprinkles and a fresh cherry.
