Ingredients

  • 2 mahi mahi filets
  • 1/2b cup Diamond of California® Macadamia Nuts
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 cup flour
  • 1 egg, scrambled
  • 4 corn tortillas
  • 1/2 cup cherry tomatoes, diced
  • 1/2 avocado, diced
  • 1/4 cup cilantro, finely chopped
  • 1/2 cup fresh pineapple, finely chopped

The Steps

  1. Preheat the oven to 400 and line a baking sheet with foil.
  2. In a shallow bowl, combine the macadamia nuts, salt, pepper, chili powder and cumin. Place the flour in a second bowl and the egg in a third bowl.
  3. Dredge the mahi mahi filets in the flour, then the egg then the macadamia mixture. If the macadamia mixture isn’t sticking, place the fish on the foil lined baking sheet and top with remaining macadamia nut mixture.
  4. Bake for 15-20 minutes depending on the thickness of the fish.
  5. Serve with tortillas, tomatoes, avocados, cilantro and pineapple.
