Walnut Feta Sliders

  • 3/4 cup refried beans (make sure they are vegetarian)
  • 1 cup Diamond of California walnuts
  • 1 cup cooked brown rice
  • 2 teaspoons chopped fresh dill
  • 1/2 teaspoon garlic powder
  • 2 1/2 teaspoons minced dried onion
  • 1 teaspoon ground black pepper
  • 1/4 cup bread crumbs
  • 1/2 cup feta crumbles (plant based feta also works)
  • 1/4 cup kalamata olives, pitted & chopped
  • 2 tablespoons vegetable oil, plus more for frying

The Steps

  1.  In a food processor add the walnuts and cooked brown rice and pulse until the mixture is the size of coarse meal.
  2. Add the walnut mixture to a large bowl stir in the refried beans, dill, garlic powder, minced dried onion, black pepper, bread crumbs, and vegetable oil until combined.  Fold in the feta crumbles.
  3. Using a 2 ounce portion scoop, divide the filling evenly. Form into a small puck shaped disc about 2 inches in diameter. You should get 9-11 slider sized burgers.
  4. Add a tablespoon of vegetable oil to a skillet and warm over medium heat. When the oil is hot add the burger in batches, making sure not to crowd the pan.
  5. Cook on each side until golden and crunchy, about 4-5 minutes. Flip and repeat.
  6. Serve on slider buns with your favorite toppings or condiments.
