Grilled Peaches with Mascarpone and Caramelized Pecans

Ingredients

  • 4 fresh peaches, cut in half with the pits removed
  • 2 tbsp butter, melted
  • 1/2 cup mascarpone cheese
  • 1 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1/2 cup Diamond of California¬ģ Chopped Pecans

The Steps

  1. Heat the grill or a grill pan over medium heat.
  2. Brush the peaches with melted butter, then position face down directly on the grill or grill pan. Cook for 3 minutes, then flip and cook for an additional minute.
  3. Remove peaches from heat and set aside.
  4. Stir the powdered sugar and vanilla extract into the mascarpone cheese. Set aside.
  5. In a sauce pan over medium-high heat, combine the water and brown sugar. Stir until the sugar melts and the mixture starts to simmer. Add the pecans and toss to coat. Remove from heat.
  6. To assemble, top each peach with a spoonful of mascarpone cheese and a drizzle of caramelized pecans.
