						Grilled Peaches with Mascarpone and Caramelized Pecans

Ingredients
- 4 fresh peaches, cut in half with the pits removed
 - 2 tbsp butter, melted
 - 1/2 cup mascarpone cheese
 - 1 tbsp powdered sugar
 - 1/2 tsp vanilla extract
 - 3/4 cup brown sugar
 - 1/2 cup water
 - 1/2 cup Diamond of California® Chopped Pecans
 
The Steps
- Heat the grill or a grill pan over medium heat.
 - Brush the peaches with melted butter, then position face down directly on the grill or grill pan. Cook for 3 minutes, then flip and cook for an additional minute.
 - Remove peaches from heat and set aside.
 - Stir the powdered sugar and vanilla extract into the mascarpone cheese. Set aside.
 - In a sauce pan over medium-high heat, combine the water and brown sugar. Stir until the sugar melts and the mixture starts to simmer. Add the pecans and toss to coat. Remove from heat.
 - To assemble, top each peach with a spoonful of mascarpone cheese and a drizzle of caramelized pecans.
