Chewy Chocolate Pecan Chip Granola Bars

Ingredients

  • 2 cups oats - old fashioned
  • 1 cup Diamond of California Pecan Chips
  • 1/2 cup flax seed meal
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/3 cup pure maple syrup
  • 1/2 cup melted coconut oil
  • 3 egg whites - whisked
  • 1 teaspoon vanilla
  • 1/3 cup dried cherries
  • 6 dried figs - chopped
  • 1/4 cup chocolate chips

The Steps

  1. Pre-heat oven to 350 degrees and spray a 9 x 13 glass baking dish with cooking spray.
  2. In a large bowl, mix together oats, pecans, flax seed, cinnamon and salt.
  3. In a separate medium bowl, whisk together maple syrup, melted coconut oil, egg whites and vanilla. Pour liquid mixture over the oats and stir well.
  4. Add cherries, figs and chocolate chips to the mixture and stir once more until ingredients are fully incorporated.
  5. Using a rubber spatula, spread the granola mixture evenly in the baking dish pressing firm so that granola bars are in a flat, even layer.
  6. Bake until golden brown, 30-35 minutes. Let cool completely before slicing.
For even easier slicing,  refrigerate the granola bars overnight.
