Brown Butter Pecan Cinnamon Rolls

Ingredients

  • Dough:
  • 1 package of instant yeast (¼ ounce package)
  • 1/2 cup warm water
  • 1/2 cup warm milk
  • 1/4 cup sugar
  • 1/3 cup melted butter
  • 1 tsp salt
  • 1 egg
  • 4 cups flour
  • Filling:
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 3 tbsp cinnamon
  • 2 tsp ground nutmeg
  • 1 cup Diamond of California® Chopped Pecans
  • Frosting:
  • 1 package cream cheese, softened (8 ounces per package)
  • 1/2 cup unsalted butter, softened (1 stick is 1/2 cup)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

The Steps

  1. In the bowl of an electric mixer, combine the yeast and warm water. Allow it to sit until yeast dissolves and starts to bubble slightly.
  2. Add the sugar, milk, butter and salt, mix with dough hook attachment until combined. Add two cups of flour, mix to combine. Add 1 ½ cups more flour, mix for 3 minutes. If dough is still sticky, add remaining flour, ¼ cup at a time.
  3. Transfer dough to a lightly floured surface and knead for 1 minute.
  4. Lightly grease a glass bowl and place the dough in it. Cover with a clean kitchen towel and set in a warm place to rise for 2 hours.
  5. While the dough rises, make the filling. Place the butter in a saucepan and cook over medium heat until the butter melts and brown flecks start to show up. Scrape all of the brown off the bottom of the pan and transfer the butter to a bowl to come to room temperature.
  6. Combine the brown sugar, cinnamon and nutmeg in a bowl, set aside.
  7. Pre-heat the oven to 350 degrees. Roll out the dough on a lightly floured surface into a large rectangle.
  8. Brush the browned butter onto the dough and top with the brown sugar mixture. Sprinkle all of the chopped pecans on top.
  9. Roll the dough up lengthwise and slice into 12 equal pieces.
  10. Place the dough spiral-side up in a lightly butter baking dish and allow it to rest for 10 minutes before baking.
  11. Bake for about 30 minutes until dough is golden brown.
  12. While the rolls bake, combine all of the frosting ingredients in a mixing bowl and mix until well combined and smooth.
  13. Spread cream cheese frosting on cooled cinnamon rolls before serving.
