Coconut Pineapple Macadamia Popsicles

Ingredients

  • 1 can coconut milk
  • 1 cup fresh pineapple, roughly chopped
  • 1/2 cup Greek yogurt
  • 1 cup white chocolate
  • 1/2 cup Diamond of California® Macadamia Nuts, finely chopped

The Steps

  1. In a blender, combine the coconut milk, ½ cup of pineapple and greek yogurt. Blend on high until well combined.
  2. Pour mixture into 8 popsicle molds until molds are about ½ full. Add the remaining pineapple chunks to the molds, then top with remaining coconut milk mixture.
  3. Cover and insert popsicle sticks. Freeze for at least 2 hours.
  4. Melt the white chocolate over a double boiler and then allow it to cool slightly.
  5. Unmold the popsicles, then dip the top of one in white chocolate. Quickly sprinkle with chopping macadamia nuts and transfer to a parchment lined baking sheet. Repeat with remaining popsicles,
  6. Return to freezer for 10 more minutes to set before serving.
