Hello Diamond Nuts Fans! Welcome to our blog, In A Nutshell. I’m Lauren, your resident baker, maker and all-around nut enthusiast. If you’re looking for inspiration for a quick weeknight dinner, a crowd-pleasing dessert, or even an adorable way to turn in-shell walnuts into holiday decorations, then you’re in the right place!
Before we jump in, here are a few things you should know about me:
- Pesto is my favorite food. I make it with walnuts and kale, pine nuts and basil, almond and spinach – any nut and leafy green combo that I can get my hands on
- Raisins on the other hand are not my favorite. But if you can’t live without ‘em, I promise to look the other way while you throw a handful into the batter
- I have a trusty kitchen assistant/taste-tester of the four-legged variety named Peanut the Dachshund
- When I’m not in the kitchen you can find me biking around town in search of inspiration for my next baking or cooking adventure
