Pine Nut Cacio e Pepe

  • 1 pound spaghetti or fettuccini noodles
  • 2 tbsp unsalted butter
  • 1/2 cup plus 2 tbsp grated parmesan cheese
  • 2 tsp ground black pepper
  • 1 tsp salt
  • 1/2 cup Diamond of California® Pine Nuts, toasted
  • fresh basil to garnish

The Steps

  1. Bring a large pot of water to a boil and cook the pasta to al dente, about 9 minutes.
  2. Reserve 1 cup of cooking water, then drain the pasta.
  3. Add the butter to the cooking pot and melt over medium heat.
  4. Add the cooked pasta, ½ cup of parmesan, and ½ cup of the cooking water. Season with salt and pepper.
  5. Toss until all noodles are coated, adding additional cooking water to thin if necessary.
  6. Divide pasta between 4 bowls and sprinkle pine nuts, and remaining cheese on top. Garnish with fresh basil before serving.
