Honey Walnut Shrimp

Ingredients

  • Walnuts
  • 1/2 cup Diamond of California walnuts
  • 1 teaspoon sugar
  • 1/8 teaspoon salt
  • 2 teaspoons avocado oil
  • Shrimp
  • 1 lb shrimp, peeled & deveined
  • 1 egg
  • 1/2 cup tapioca flour
  • 1/2 teaspoon garlic flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Honey Sauce
  • 2 tablespoons lowfat mayo
  • 2 tablespoons honey
  • 2 teaspoons lemon juice

The Steps

  1. Place the walnuts, sugar, salt, and avocado in a bowl and toss to combine. Place the walnuts in the air fryer and cook on 200F for 10 minutes. Set aside
  2. Place the egg in a shallow bowl, and whisk until well combined.
  3. In another shallow bowl, whisk the tapioca flour, garlic powder, salt, ground black pepper until combined.
  4. Dip the shrimp into the egg wash, making sure to let any excess egg drip off. Then dip the shrimp in the flour mixture, shaking off any excess flour.
  5. Line the air fryer with foil. Spray the foil with cooking spray and then place the shrimp in one layer in the air fryer. Spray the shrimp with a light coating of cooking spray.  Cook on 400F for 10 minutes. Cook in batches if necessary.6
  6. While the shrimp are cooking, prepare the sauce. Place the mayo, honey, and lemon juice in a bowl and mix until smooth.
  7. Once the shrimp are done cooking, place them in a bowl with the walnuts. Pour the honey sauce into the bowl and toss to coat. Serve with brown rice, sauteed broccoli and bell peppers.
