Double Chocolate Walnut Zucchini Bread

  • 1 1/2 cups shredded raw zucchini
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 cup unsweetened natural cocoa powder, sifted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup canola oil
  • 1/2 cup granulated white sugar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoon pure vanilla extract
  • 3/4 cup semi sweet or bittersweet chocolate chips
  • 2/4 cups Diamond of California¬ģ Chopped Walnuts

The Steps

  1. Preheat the oven to 350 and grease an 8×5 loaf pan.
  2. Spread the zucchini out on a paper towel and blot with another paper towel to remove some of the moisture.
  3. In a large bowl, whisk together the flour, cocoa powder, baking powder and salt.
  4. In another bowl, whisk together the eggs, canola oil, white sugar, brown sugar and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. fold in the shredded zucchini, chocolate chips and walnuts.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes or until a tooth pick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 5 minutes before turning it onto a wire rack to finish cooling.
