Cranberry Pecan Pie

  • 4 large egg yolks
  • 1 14oz can sweetened condensed milk
  • 1/4 cup cranberry juice
  • 1/4 cup lemon juice
  • 1 drop red gel food coloring (optional)
  • 1 9" Diamond of California Pecan Pie Crust
  • 1 cup cranberry relish
  • 1 cup whipped cream
  • 1/2 cup Diamond of California Pecan Halves

The Steps

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl combine the sweetened condensed milk, egg yolks, cranberry and lemon juice. Whisk until smooth. Add the food coloring and stir until the color is uniform. Pour              into the Diamond pecan pie crust.
  3. Bake on the middle rack until the center of the pie is just set, 20 to 25 minutes. Remove from the oven and let cool for 1 hour. Add the cranberry relish to the top and spread       until   even. Do the same with the whipped cream. Garnish with pecan halves around the edge of the pie where the whipped cream meets the crust. Refrigerator for another hour until chilled or until you are ready to serve.
