Chocolate Chip Walnut Cookie Cake

Ingredients

  • 1/2 cup (1 stick) butter, soften to room temperature
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Diamond of California Chopped Walnuts
  • 1/4 cup dark chocolate chunks
  • 1/4 cup white chocolate chunks
  • 1/4 cup milk chocolate chunks

The Steps

  1. Pre-heat the oven to 375 and grease an 8-in cake pan.
  2. Sift the flour, salt and baking soda into a bowl, set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter for 1 minute. Add the sugar and brown sugar and continue to mix on medium-high speed for 3 minutes, until mixture is light and fluffy.
  4. Add the egg and then the vanilla, scraping down the sides of the bowl and mixing until fully incorporated between each addition.
  5. Add the dry ingredients to the mixing bowl and mix until just combined.
  6. Reserve 1 tbsp each of the walnuts, dark chocolate, white chocolate and milk chocolate, then add the remaining to the dough and use a spatula to combine.
  7. Scoop all of the dough into your prepared pan and use a spatula to spread it in an even layer. Press the reserved walnuts and chocolates into the dough and bake for 12-14 minutes.
  8. Serve with a scoop of vanilla ice cream on top!
