Carrot Cake Cinnamon Rolls

Ingredients

  • 1 can prepared cinnamon roll dough (5 count)
  • 1 1/2 cups shredded carrots
  • 1/3 cup butter, melted
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1 pinch salt
  • 1 8oz block of cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons cream
  • 1/4 cup Diamond of California chopped pecans
  • Orange zest, optional

The Steps

Carefully remove the cinnamon roll dough from the can and, without separating the rolls, unravel the dough log about 3/4 of the way. Set aside. 

 

In a small bowl, mix together the shredded carrots, melted butter, sugar, cinnamon, and salt until well-combined. Add the mixture to the unraveled dough in an even layer and re-roll the dough into a log. Carefully separate each roll and place them close together in a greased baking dish. Bake for about 30 minutes (depending on the package directions). Allow the rolls to cool slightly before frosting.

 

In the meantime, make the cream cheese frosting. In a medium bowl, mix together the softened cream cheese, powdered sugar, and heavy cream until completely smooth. Frost the slightly cooled cinnamon rolls with the frosting and top with chopped pecans and orange zest (optional). Enjoy!
