Ingredients
- 2 Cups all-purpose flour
- 3 Cups old fashioned rolled oats
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoons baking soda
- 1/2 teaspoon salt
- 1 pinch nutmeg
- 1 Cup salted butter, softened
- 3/4 Cup packed brown sugar
- 1/2 Cup granulated sugar
- 3 medium ripe bananas, mashed (about 1 cup)
- 1 teaspoon vanilla extract
- 2 eggs
- 2 Cups semi-sweet chocolate chunks
- 2/3 Cups Diamond chopped walnuts
The Steps
Preheat oven to 350°F. Line baking sheets with parchment paper.
In medium bowl, whisk together flour, oats, cinnamon, baking soda, salt, and nutmeg. In large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add mashed banana, vanilla, and eggs. Mix until fully combined.
Add dry ingredients to wet ingredients and mix just until no dry streaks remain. Fold in the chocolate chunks and Diamond chopped walnuts.
Scoop dough into 2-tablespoon portions and place 2 inches apart on prepared baking sheets. Bake for 10–12 minutes, or until edges are lightly golden and centers are set. Cool on the baking sheet, then transfer to a wire rack. Enjoy!
