Spiced Pumpkin Bread With Walnuts

Ingredients

  • Streusel:
  • 1 cup flour
  • 1 cup firmly packed light brown sugar
  • 3/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt
  • 1/4 cup (1/2 stick) cold butter, cut into chunks
  • 1/2 cup Diamond of California® Chopped Walnuts
  • Bread:
  • 1 cup Diamond of California® Chopped Walnuts
  • 2 1/4 cups flour
  • 2 cups granulated sugar
  • 2 tablespoons pumpkin pie spice
  • 1 1/2 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 4 eggs
  • 1 can (15 ounces) pumpkin
  • 1 cup vegetable oil

The Steps

  1. For the Streusel, mix flour, brown sugar, pumpkin pie spice and salt in medium bowl. Cut in butter with pastry blender or 2 knives until coarse crumbs form. Mix in walnuts.
  2. For the Pumpkin Bread, spread walnuts on shallow baking pan. Toast in preheated 350°F oven 5 to 10 minutes or until lightly browned, stirring occasionally.
  3. Meanwhile, grease and flour two 9×5-inch loaf pans. Mix flour, granulated sugar, pumpkin pie spice, baking soda and salt in large bowl. Set aside.
  4. Beat eggs in medium bowl. Stir in pumpkin and oil. Add to flour mixture; stir just until moistened. Stir in toasted walnuts. Divide batter evenly between prepared pans. Sprinkle top of each loaf with Streusel.
  5. Bake 55 to 60 minutes or until toothpick inserted into center comes out clean. Cool in pans 10 minutes. Remove from pans. Cool completely on wire rack.
