One Pot Mac and Cheese with Butternut Squash and Walnuts

Ingredients

  • 2 cups dry elbow pasta
  • 2 cups butternut squash, cut into small chunks
  • 2 cups whole milk
  • 1/4 cup unsalted butter
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 3/4 cup Diamond of California Chopped Walnuts

The Steps

  1. In a large pot over medium heat, combine the dry pasta, butternut squash, milk, butter, nutmeg and salt. Cook until mixture comes to a boil then reduce the heat to low and allow it to cook for another 10 minutes.
  2. Stir in the cheddar and parmesan cheeses and continue stirring until a thick sauce has formed.
  3. Remove from heat and add the walnuts, stir to combine and then serve!
