Chewy Chocolate Chip Walnut Cookies

Ingredients

  • 3/4 cup (1 1/2 sticks) butter
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup Diamond of California® walnuts, chopped
  • 1 cup dark chocolate chips
  • 1 cup shredded sweetened or unsweetened coconut

The Steps

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper or lightly grease.
  2. In a large bowl with an electric mixer, cream butter and sugars until light and fluffy. Add the eggs, vanilla and salt; beat well.
  3. In a large bowl combine flour, oats, baking powder and baking soda. Stir to combine. Add this mixture to the butter mixture and mix until the dough comes together. Stir in walnuts, chocolate chips and coconut until well blended.
  4. Place generous 2 tablespoon size balls of dough 2 inches apart on baking sheets. Press tops down slightly with the back of a spoon.
  5. Bake 14-16 minutes or until lightly browned on edges and just set in centers. Transfer to wire cooling racks. When cool, the cookies will be crunchy on the outside and delightfully chewy on the inside.
