Cherry Almond Custard Pie

  • 1 basic pie crust
  • 1/2 cup Diamond of California Sliced Almonds, divided
  • 1 can Tart Cherries
  • 3 eggs
  • 1/4 cup sugar
  • 3 tablespoons flour
  • 1/4 cup Heavy Cream
  • 1/2 teaspoon almond extract

The Steps

  1. Preheat the oven to 350. Roll out the pie crust, and transfer it to a 9-inch pie pan.
  2. Sprinkle ¼ cup of sliced almonds on top of the dough in the pie pan, then pour the tart cherries on top.
  3. Whisk the eggs, sugar, flour, heavy cream and almond extract to combine. Pour mixture on top of the cherries in the pie pan.
  4. Place the pie on a sheet pan, then bake for 30 minutes or until filling is set and starting to brown.
  5. Sprinkle remaining sliced almonds on top before serving.
