Spider Web Caramel Apples

Ingredients

  • 4 apples
  • 4 lollipop sticks
  • 1 cup sugar
  • 3/4 cup honey
  • 1/2 cup (1 stick) butter, cut into chunks
  • 1 cup cream
  • 1/2 cup Diamond of California Chopped Pecans
  • 1/2 cup Diamond of California Chopped Walnuts
  • 1/2 cup dark chocolate chips

The Steps

  1. Wash the apples and remove the stems. Careful push a lollipop stick about 2 inches into the apple where the stem used to be. Set aside on parchment lined baking sheet. Repeat with remaining apples.
  2. In a large sauce pot, combine the sugar, honey, butter and cream. Attach a candy thermometer inside the pot. Stir the mixture over high heat until the sugar dissolves and the butter melts.
  3. Continue to cook the mixture until it turns golden brown and reaches 242 degrees. Remove from heat and carefully transfer to a heat proof bowl that is large enough to dip the apples into.
  4. Allow the caramel to cook for 15 minutes, then dip an apple into the caramel, coating it completely. Remove the apple and shake it slightly to remove the excess caramel, then dip into the pecans or walnuts. Place back on the sheet pan to cool. Repeat with remaining apples.
  5. Place the chocolate chips in a microwave safe bowl and heat for about 1 minute or until melted. Remember to stir the chocolate every 20 seconds to prevent burning.
  6. Transfer chocolate to a piping bag with a small, round tip.
  7. Pipe straight vertical lines all the way around the apple leaving about ½ inch between each line. Connect each line with a curved horizontal line to create a spider web look.
  8. Allow chocolate to harden before serving.
