Asparagus with Almonds

Ingredients

  • 1 pound asparagus, washed, trimmed, and cut diagonally into 3-inch lengths
  • 3 tablespoons butter
  • ½ cup Diamond Sliced Almonds
  • 6 green onions, cut into 3-inch lengths and julienned (about ¾ cup)
  • 1 teaspoon grated lemon zest
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons freshly squeezed lemon juice

Directions

Bring a large pot of water to a boil over high heat. Add asparagus and cook until crisp-tender, 3 to 5 minutes. Drain in a colander. Arrange on a serving platter; keep warm. In a large frying pan, melt butter over medium heat. Add almonds and cook, stirring occasionally, until lightly browned and fragrant, 2 to 3 minutes. Add green onions, lemon zest, salt, and pepper; heat through. Add the lemon juice; cook for 1 minute. Pour almond-onion mixture over asparagus. Serve immediately.
