Almond Harvest Salad

Serves 4 Servings

 

Ingredients

  • 3 cups cooked white and wild rice*
  • 2 oranges, peeled and sectioned
  • 1 apple, chopped
  • 2 Tbs. currants
  • ¼ cup finely diced red onions
  • 2 cups cooked cubed chicken breast
  • ½ cup whole natural almonds, toasted
  • Light Orange Dressing (see below)
  • *Or use 1 package (6 oz.) long grain and wild rice mix, omitting herb seasoning during cooking.
  • LIGHT ORANGE DRESSING
  • cup almond or olive oil
  • ¼ cup fresh orange juice
  • 1 Tbs. parsley
  • 2 tsp. lemon juice
  • ¼ tsp. salt
  • tsp. black pepper

Directions

Combine all ingredients, except Light Orange Dressing, in mixing bowl. Toss with dressing; mix thoroughly. Chill 2-3 hours to allow flavors to blend.

LIGHT ORANGE DRESSING
Combine all ingredients in mixing bowl. Whisk until thoroughly blended
