Walnut Hummus with Toasted Pine Nuts

Ingredients

  • 2/3 cup Diamond of California Chopped Walnuts
  • 2 cans of chickpeas, drained and rinsed (14 oz each can)
  • 3 cloves garlic
  • 4 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1/4 tsp paprika
  • 2 tbsp Diamond of California Pine Nuts, toasted

The Steps

  1. Place the walnuts in a food processor and grind until a smooth paste forms.
  2. Scrape down the sides of the food processor. Add the chickpeas, garlic, lemon, olive oil and salt. Pulse until smooth.
  3. Transfer to a bowl and sprinkle with paprika and pine nuts.
  4. Serve with fresh vegetables and pita chips.
