Ingredients

  • 1 cup Diamond of California Chopped Walnuts
  • 1/4 cup honey
  • 1/4 cup water
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup brie, cut into small cubes
  • 6 tbsp very cold unsalted butter
  • 3/4 cup buttermilk
  • 1 egg for egg wash

The Steps

  1. Pre heat the oven to 400 degrees.
  2. Combine the honey and water in a small sauce pan over high heat. Cook until mixture begins to boil.
  3. Add the walnuts and cook until nuts are completely coated and most of the liquid has cooked off.
  4. Transfer nuts to a parchment lined baking sheet, spreading them out to prevent clumping. Allow the nuts to cool completely.
  5. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  6. Add the nuts and the brie to the mixture and toss slightly to coat them with the flour mixture.
  7. Cut the butter into small chunks and add to the flour. Using your hands, work the butter quickly into the flour.
  8. Add the buttermilk and mix with your hands until the dough comes together.
  9. Roll the dough out on a floured surface until it’s about 1 and ½ inches thick. Cut using a 2-inch round biscuit cutter and place on a parchment lined baking sheet. Once you have cut out all the biscuits, press the remaining dough back together without rolling to cut more biscuits.
  10. Brush the biscuits with egg before baking for 20 minutes or until golden brown.
