Butterscotch Cashew Bars

Ingredients

  • Crust
  • 1 cup and 2 tablespoons butter, softened
  • 3/4 cup and 2 tablespoons packed brown sugar
  • 2 1/2 cups all-purpose flour
  • 1 3/4 teaspoons salt
  • Topping
  • 1 package (10-11 ounces) butterscotch chips
  • 1/2 cup and 2 tablespoons light corn syrup
  • 3 tablespoons butter
  • 2 teaspoons water
  • 1/4 teaspoon salt
  • 2 1/2 cups Diamond of California® cashew halves

The Steps

  1. Preheat oven to 350°F.
  2. To prepare cookie crust: In a large bowl, cream the butter and brown sugar until light and fluffy. Combine flour and salt; add to creamed mixture just until combined.
  3. Press into a greased 14 or 15-inch x 10-in. x 1-inch rimmed jelly roll pan. Bake 10-12 minutes or until lightly browned.
  4. To prepare topping:  While crust is baking, in a small saucepan, combine the butterscotch chips, corn syrup, butter, water and salt. Cook and stir over medium heat until chips are melted and mixture is smooth. Spread over baked crust. Sprinkle evenly with cashews; press down lightly.
  5. Bake for 11-13 minutes or until topping is bubbly and lightly browned. Cool on a wire rack. Cut into bars.
